I'm going to go with Cemetery Hill/Entrance Hall, because it feels like a really deep swaying waltz of a tune and it's always the first tune I think of (aside from maybe Dan's Crypt) when it comes to Medievil Oddly I also really like the final credits music, it sounds like a twinkly sort of gothic lullaby.

All bow down before the master of the vegetable patch, the prize-winning plant who can summon an army of cabbage with a wave of his noble tendril.
He's delicious. He's nutritious. He's Zarok's secret recipe - he's the Pumpkin King!
The entire soundtrack is absolutely amazing, but my favorite would still have to be The Haunted Ruins, since I just love that eerie vibe. It's definitely hard to choose, though, since all of them are so good.
So many fantastic tracks that capture the right theme and tone of each level. Even if I said Cemetery Hill was my favorite, the credits theme really does it for me. It has a lot of closure to it and it feels so sentimental. I listen to it often on the go aswell!
