I've been meaning to make a thread where we could link voice actors to each voiced character in the game. This one could do.
These are the voice actors listed in the first game's credits:
VOICE ACTORS Luis Soto (Profile; has voice samples): Pretty sure he's Bloodmonath Skull Cleaver. This site also lists him as the voice of RavenHooves the Archer. I can kind of see it, I guess. I don't think the website's a very reliable source, though.
Paul Darrow (Official website): Zarok, Jack of the Green, Cemetery Hill Gargoyles
ADDITIONAL VOICES Helen Smith Tom Oswald Jason Riley
We also know that Jason Wilson apparently voiced Sir Dan with a bucket over his head, though he's not given credit in-game at all. Maybe they mixed up the Jasons in the "additional voices" section? Just a thought.
As for who voiced the Gargoyles, that's hard to tell. Best you could do is google the names and see if you can find voice samples that you could compare against the voices of the Gargoyles.
EDIT: Decided to make this the go-to post of the thread. I'll be updating it with voice samples of voice actors, their professional profiles, as well as who they likely voiced in MediEvil. Input greatly appreciated.
Very good thread idea, I like it! I think its a bit of a shame that the actors weren't credited to their characters, but I guess the fun now is figuring out who was involved. Maybe if we can get in touch with them we could get some interviews on the recording process of Medievil (which just made me think, an interview with Bob and barns would be class, too!)

Games were an odd thing with voice actors back in the 90's, some weren't sure if gaming voiceovers were supported by the screen actors guild. Metal Gear Solid on the PS1 was the best example of this as most people were given fake names in the credits, so for Medievil perhaps a lot of them weren't credited for much the same reason.
On that note.... I would love that interview too honestly! Any interview with guys who worked on Medievil as we've never really had a post-Medievil completed interview. I'd love to get Paul Darrow to sign a copy of Medievil 1
